Apple raisin bran muffins

Ingredients 

  • 1 ½ cups all purpose flour
  • ¼ cup granulated sugar
  • 1 tablespoon baking powder
  • ½ teaspoon ground cinnamon
  • ¼ teaspoon ground nutmeg
  • ¼ teaspoon table salt
  • 2 eggs
  • 1 cup reduced fat milk
  • ¼ cup vegetable oil
  • 1 ½ cups Post® Raisin Bran cereal
  • 1 large apple peeled, finely chopped (1 cup)
  • ½ cup chopped walnuts

Instructions

  1. Prepare a muffin pan by either greasing or placing paper liners in cups. Set aside.
  2. In a large bowl, mix flour, sugar, baking powder, cinnamon, nutmeg and salt. Set aside.
  3. In a small bowl, whisk eggs, milk and oil until well blended.
  4. Add wet mixture to dry mixture; stir just until moistened (batter will be lumpy). Stir in Post Raisin Bran cereal, apple and walnuts.
  5. Spoon batter into prepared muffin pan, filling each cup ⅔ full.
  6. Bake at 425°F for 20 minutes or until toothpick inserted in centers comes out clean.
  7. Let cool 5 minutes. Serve warm.
