Apple Post® Raisin Bran Cereal Muffins
Bran muffins benefit from the flavor and moisture of apples and raisins. Our apple raisin bran muffin recipe is made easy with Post® Raisin Bran cereal.

Ingredients
- 1 ½ cups all purpose flour
- ¼ cup granulated sugar
- 1 tablespoon baking powder
- ½ teaspoon ground cinnamon
- ¼ teaspoon ground nutmeg
- ¼ teaspoon table salt
- 2 eggs
- 1 cup reduced fat milk
- ¼ cup vegetable oil
- 1 ½ cups Post® Raisin Bran cereal
- 1 large apple peeled, finely chopped (1 cup)
- ½ cup chopped walnuts
Instructions
- Prepare a muffin pan by either greasing or placing paper liners in cups. Set aside.
- In a large bowl, mix flour, sugar, baking powder, cinnamon, nutmeg and salt. Set aside.
- In a small bowl, whisk eggs, milk and oil until well blended.
- Add wet mixture to dry mixture; stir just until moistened (batter will be lumpy). Stir in Post Raisin Bran cereal, apple and walnuts.
- Spoon batter into prepared muffin pan, filling each cup ⅔ full.
- Bake at 425°F for 20 minutes or until toothpick inserted in centers comes out clean.
- Let cool 5 minutes. Serve warm.
