Cinnamon Toasters Banana Muffins
These cinnamon banana muffins are equally sweet and crunchy, thanks to their secret ingredient – Malt-O-Meal® Cinnamon Toasters cereal!
Ingredients
Muffin Batter
- ⅔ cup sugar
- 2 eggs
- ¾ cup butter
- 3 ripe bananas
- 1 ¾ cups flour
- 1 cup Malt-O-Meal® Cinnamon Toasters cereal crushed
- 1 ¼ teaspoon baking powder
- ½ teaspoon baking soda
- ¾ teaspoon salt
Crunchy Topping
- 2 tablespoons unsalted butter melted
- 2 tablespoons all-purpose flour
- 1 cup Malt-O-Meal® Cinnamon Toasters cereal crushed
- ¼ cup light brown sugar
Instructions
- Preheat oven to 350° F.
- Melt butter until melted and then stir in 1 cup of crushed cereal, brown sugar and flour until it becomes crumbly. Set aside.
- Mix sugar, butter, and eggs until creamy.
- Combine flour, baking soda, baking powder, and salt; then add to wet ingredients.
- Add bananas and beat until blended.
- Pour batter into greased muffin tins or paper cups.
- Sprinkle crunchy cereal toppings on top.
- Bake for 25 to 30 minutes.
