Cranberry Orange Nut Bread
Our best cranberry orange nut bread is made with orange zest, fresh orange juice, cranberries, pecans and Post® Raisin Bran cereal to create a moist and bright quick bread.

Ingredients
- 1 egg
- 1 cup milk
- 1 tablespoon orange zest
- 1/3 cup orange juice
- ¼ cup oil
- 2 cups Post® Raisin Bran Cereal
- 1 ¾ cups flour
- 1 tablespoon baking powder
- ¼ teaspoon salt
- 1 cup cranberries
- ½ cup pecan pieces coarsely chopped
Instructions
- Preheat oven to 350ºF. Grease and flour a 9x5-inch loaf pan. Set aside.
- Beat egg, milk, orange zest, orange juice and oil in medium bowl with a whisk until well blended.
- Stir Raisin Bran cereal into wet mixture. Let stand 5 minutes to soften cereal flakes. Meanwhile, mix flour, sugar, baking powder and salt in large bowl.
- Add wet mixture to dry mixture; stir just until moistened (batter will be lumpy). Stir in cranberries and pecans.
- Pour batter into loaf pan. Bake 1 hour 15 minutes or until wooden toothpick inserted in center comes out clean.
- Cool 10 minutes in pan. Remove from pan to wire rack and let cool completely.
