Our best cranberry orange nut bread is made with orange zest, fresh orange juice, cranberries, pecans and Post® Raisin Bran cereal to create a moist and bright quick bread.

Ingredients 

  • 1 egg
  • 1 cup milk
  • 1 tablespoon orange zest
  • 1/3 cup orange juice
  • ¼ cup oil
  • 2 cups Post® Raisin Bran Cereal
  • 1 ¾ cups flour
  • 1 tablespoon baking powder
  • ¼ teaspoon salt
  • 1 cup cranberries
  • ½ cup pecan pieces coarsely chopped

Instructions

  1. Preheat oven to 350ºF. Grease and flour a 9x5-inch loaf pan. Set aside.
  2. Beat egg, milk, orange zest, orange juice and oil in medium bowl with a whisk until well blended.
  3. Stir Raisin Bran cereal into wet mixture. Let stand 5 minutes to soften cereal flakes. Meanwhile, mix flour, sugar, baking powder and salt in large bowl.
  4. Add wet mixture to dry mixture; stir just until moistened (batter will be lumpy). Stir in cranberries and pecans.
  5. Pour batter into loaf pan. Bake 1 hour 15 minutes or until wooden toothpick inserted in center comes out clean.
  6. Cool 10 minutes in pan. Remove from pan to wire rack and let cool completely.
